1 avocado
1 1/2 limes
1 plum tomato
1 bunch cilantro, chiffonade
Salt and pepper to taste
1/4 red onion, minced small
Sweet potatoes, sliced thin on mandolin
Bake sweet potatoes in 350 degree oven until crispy and light brown. They should be drizzled with olive oil and sprinkled with salt and pepper.
